Sunshine Weddings Spain visit Fosh weddings caterers in Mallorca

This winter, Sunshine Weddings Spain were fortunate enough to be invited to Mallorca to visit Michelin starred caterers Fosh and sample their new and delectable wedding menu. We spoke to Sunshine Weddings Spain director, Scott Gibbons, about the experience:

“People often ask me what it’s like being a wedding planner in Spain. If you ask me during our busiest time (in Spain we have a long wedding season, from May to October) then I would say it’s hectic, non-stop, fun but exhausting. If you’re to ask me over the winter months, I’d say I have a pretty cool job. That’s because during the quieter months my team and I get the chance to meet up with the wedding couples, show them around our ever-increasing array of stunning wedding venues in the south of Spain and Mallorca, and of course sample some incredible menus!

In December 2018 I visited our team on the stunning island of Mallorca. Winter on the island is a beautiful time of year. Although the evenings and early mornings can be a bit chilly, there was still plenty of sunshine and blue sky to accompany us around the stunning Iberian coast and through the mountains. When we arrived at Fosh’s tasting kitchens we were greeted by Kevin, chef and director of Fosh Catering. Michelin-starred chef Marc Fosh is renown on the island as having established one of its leading restaurants, offering haute cuisine dining – and his expertise and high standards can also be found in the restaurant’s catering services lead by the talented Kevin.

The first thing that struck me and the team as we walked into the kitchen was the delicious smell. Kevin and his chefs were busy at the stove mixing and preparing and we were quickly poured our first glass of wine. One of the fantastic things about getting married in Mallorca is the opportunity to feature local wines at your wedding. Many of our venues look out over these pretty vineyards, and there’s nothing more special than supporting local farmers and wine producers.

The wine was followed by an exciting variety of Fosh’s famous canapes. When you think wedding canapes, the same boring options normally spring to find – but not when you’re sampling a Fosh wedding menu. We started with some much-loved favourites including blinis with marinated salmon and caviar, and mini hamburgers with pulled pork and BBQ. We especially enjoyed Fosh’s twist on traditional Spanish dishes such as cherry gazpacho, melon burst with Iberian ham, olive macarons with artisanal Majorcan sobrasada (in two different colours), sangria of fresh fruit: (melon, watermelon, pineapple), octopus with smoked paprika and both farm raised chicken, and Iberian ham, croquettes. They were the perfect way to introduce a taste of Mallorca in the most luxurious of ways! We were also introduced to some really original dishes including celeriac cream with lime and bresaola, baguette “AIR” with local Menorca cheese, gorgonzola and apricot sandwich, pumpernickel toast with goat cheese and figs, quail egg with bacon and crispy onions, goat cheese and truffle “stones”, classic Ceviche of seabass and prawns with guacamole, chilled carrot and orange soup, and wild mushroom and truffle cannelloni.

And we still weren’t finished!

As we sampled more fine local wines, Kevin talked us through the preparation of each dish and how the ingredients are researched and sourced. We then moved on to starters.

Mallorca is a fantastic location in which to get married, not just because you’re spoiled for choice with its breath-taking locations, views and weather – but the local produce is plentiful and varied. Something that was certainly evident in the array of dishes we got to sample.

There were three starters to choose from: Yellow Gazpacho with lobster, cous cous and mango, Summer salad with beefsteak tomatoes, feta cheese and watermelon, and the all-time favourites – Surf and turf with Iberican pork belly and seared sea scallop. As you can imagine the seafood in Mallorca is second to none and, with pork featured in many local dishes, the quality of the meat is of an extremely high standard too.

The main dishes on offer were just as impressive. We tried a mouth-watering Braised beef cheeks with green peas, glazed baby onions and spinach, along with Suckling pork with green apple sauce, baby potatoes and smoked ham, and another favourite meat dish – Aged beef filet with gnocchi romana, sun dried tomato and seasonal vegetables.

Fosh combines not just a taste of Spain in their dishes, but all the flavours of the Mediterranean. Even though we were full to bursting, we held out for something sweet. Dessert!

I knew I was in for a treat as Fosh Catering is just as famed for their sweet creations as much as their savoury. Again, we got to sample three dishes. Chocolate dream consisted of a milk chocolate semi freddo, dark chocolate tart with white chocolate cremoso (yes, it was a special as it sounds), as well as enjoying the Mango Cheesecake with passion fruit, strawberries & lemon verbena, and finishing with the Strawberry Gazpacho with lemon grass and a yogurt parfait.

Well what can I say? We were thoroughly spoiled and so was our team of wedding planners and our lucky bridal couples. It goes without saying we definitely have the best job in the world!”
