Cake, love, and a lifetime of happiness are all the ingredients you need for your happy ever after…
And today we are going to focus on the “cake” ingredient of this sweet mix, because let’s be honest a wedding wouldn’t be complete without one, and what’s more, they can be perfectly designed to fit your venue and the decoration style as we discover in today’s interview with dessert artist Sofia, from Cake Studio Mallorca.
I became a baker by chance. I had just graduated UCLA in Art History and was considering a law degree. During The summer I worked at a bakery–My neighbour got me the job. My boss showed me how to decorate in a few hours, haha, and I was set! I got very good quite fast, and was immediately hooked. After graduating I decided to stay making cakes as it made me happier than anything. Following my internship, I went on to get my culinary degree in pastry as well.
When a bridal couple reaches out to me via email, text or phone call–I typically proceed to explain my process. I work directly with each client and customise all details. Typically I send my list of flavours to give the clients an idea of flavour possibilities, although we aren’t limited to the list. Once I get some basic information such as flavours, design or photo, amount of servings and delivery location–I can give my clients a very accurate price of the cake. I walk through each step with my clients though, so it isn’t too stressful.
I offer all options of cakes including organic, vegan, gluten-free, dairy-free, and nut-free options. Each cake is customised and designed to be exactly what each client needs, without adding to the cost of pricing. My services are included in the pricing and it can be very helpful for a complicated wedding with certain allergies or food preferences.
I find my ideas from so many places. Sometimes clients have a photo already in mind. Many times they don’t but we speak at length and the client describes their preferences and I draw a preliminary sketch for them to review. I’ve had jewellery designers, artists, lawyers, from all professions really– even other chefs ask me for their wedding cakes and it’s always exciting settling on a design of their dreams.
My personal favourite cake flavour is Lemon cake with raspberry buttercream and fresh raspberries and marble cake with mocha whipped cream. Simple but delicious!
The lemon cake is the most popular as well.
I recommend clients place their order beginning at 8-6 months before their event to make sure there is availability.
There are several topics to keep in mind when selecting a cake. Their wedding party–do they tend to like sweets or not so much. Will it be easier to choose one flavour for the entire cake or several for each tier? What time the cake will be served will be a large factor of how many servings to get the cake for. How hot/time of the year will it be during the wedding and choosing fillings and will they have refrigeration at location? What is more important–design or flavour, or both? All great things to consider before placing an order.
